These bars are everything you want in a late-summer dessert—rich, buttery, and bursting with juicy peaches that are at their peak right now. If you’re looking for a baking project that’s not only simple but also incredibly rewarding, this is it.

The Magic of Browned Butter

If you’ve been following along for a while, you know that it’s no secret that I have a love affair with browned butter. It’s the magic to what makes these peach bars so irresistible! Browning the butter adds a deep, nutty flavour that elevates these bars from ordinary to extraordinary.

The process is simple but you must pay attention: just melt the butter in a pan, then keep cooking it until it turns a golden brown and develops a wonderfully rich aroma. This step only takes a few minutes, but the result is a depth of flavour that’s well worth the extra effort. The butter will foam up and then go back down and it will be ready to be taken off the heat and cooled.

At this time of year, they’re juicy, sweet, and perfectly ripe, making them ideal for baking. When combined with the browned butter, the peaches take on an almost caramelized quality as they bake, adding a sweet, slightly tangy contrast to the rich, buttery crust. It’s a combination that’s absolutely mouthwatering.

I don’t peel my peaches but you certainly can! I prefer the colour and texture of the skin on.

They’re a sweet reminder of summer’s bounty, and the browned butter adds a cozy richness that hints at the cooler days to come. Whether you enjoy them warm from the oven with a scoop of vanilla ice cream or cool from the fridge with your morning coffee, they’re sure to become a new Labour Day tradition.

 

What you’ll need:

Mixing Bowls | Spatula | Hand Mixer | Baking Dish | Measuring Cups | Measuring Spoons | Offset Spatula (optional but great to have)

Brown Butter Peach Bars

Ingredients:

  • 2 cups all purpose flour

  • 1/3 cup granulated sugar

  • 1/3 cup light brown sugar

  • 3/4 teaspoon baking soda

  • 1/2 teaspoon salt

  • 3/4 cup unsalted butter, cut into pieces

For the filling

  • 4 peaches, pits removed

  • 1/2 cup light brown sugar

  • 1/2 tsp cinnamon

  • 2 tsp vanilla extract

  • 1 tsp cornstarch

  • pinch of salt

Directions:

  1. Preheat your oven to 350F and grease a 9 inch square baking dish. Line it with parchment paper and set aside.

  2. In a small saucepan, brown the 3/4 cups of butter. Watch it closely as you do NOT want it to burn. Stir it occasionally as it starts to bubble and foam. You want to scoop up the brown bits on the bottom of the pan. Once browned and nutty smelling, set it aside to cool slightly.

  3. Slice the peaches in to large chunks and combine the sliced peaches, brown sugar, corn starch, cinnamon, vanilla extract and salt.

  4. Whisk together the 2 cups of flour, both sugars (1/3 cup each), 3/4 tsp baking soda and salt.

  5. Pour the browned butter all over the dry ingredients and using a spatula, mix to combine until a crumbly dough forms.

  6. Dump about 2/3 of the mixture into the prepared pan and press it down to form a bottom layer for your bars. It should be in an even layer. Next, give your peaches one last stir and then add them on top of the base layer. Finally, dot the remaining dough mixture on top of the peaches.

  7. Bake for 45-50 minutes until the topping is golden and the filling is bubbling. transfer to a wire rack to cool in the tin for at least an hour.

  8. Lift the bars out of the tin once cooled (using the parchment paper).

    Serve these bars with salted caramel ice cream and let the late summer memories be made!
