Cedar Plank Pesto Salmon with Lemon

Cedar Plank Pesto Salmon with Lemon

Ingredients:

  • 1 cedar plank, submerged in water for at least 30 minutes but 1 hour is better.

  • 4 6oz salmon filets or 1 large side of salmon

  • 1 lemon, sliced into rounds, plus more for garnish

  • 1/2 cup store bought or homemade basil pesto

  • S&P

Directions:

  1. Preheat the grill to 350F. You will cook the salmon on indirect heat, so you only need to heat up one side of your grill (depending on how much space you have)

  2. Using paper towel, dry your salmon filets. Arrange the lemon slices to create a little bed for the salmon to lie on and place the salmon on the cedar plank.

  3. Season the salmon with salt & pepper and then spread a generous layer of the pesto all over the salmon. (note: if your salmon has skin, place it skin side down)

  4. Place the salmon on the cedar plank into the preheated BBQ. Close the lid and cook for 12-15 minutes. The salmon is cooked through when the internal temperature reaches 145F (if you don’t yet have a meat thermometer, this could be a game changer for you). The salmon should flake easily but not be dry.

  5. Garnish with lemon slices, fresh basil and serve!
