When I meal prep, I know I’ve set myself up for a winning day. I love waking up to Strawberries & Cream Chia Pudding that is packed with fibre and protein but takes almost no time to pull together. This breakfast takes 5 minutes but will last you all week in the fridge. It’s creamy, sweet and decadent!

What’s the deal with Chia Pudding?

Chia seeds are tiny powerhouses of nutrition, packed with fibre, protein, omega-3 fatty acids, and a range of essential minerals. When soaked in liquid, they expand and create a pudding-like consistency that's both satisfying and fun to eat. Combined with the creamy richness of almond milk (or your choice of milk!) and the natural sweetness of strawberries, this chia pudding is a breakfast that feels indulgent while being incredibly good for you.

TIPS for Success:

  • Consistency Matters: If you prefer a thicker pudding, reduce the amount of milk slightly. For a thinner consistency, add a bit more milk before refrigerating.

  • Sweeten to Taste: Adjust the sweetness by adding more or less honey or maple syrup according to your taste preferences.

  • Make It Vegan: This recipe is naturally plant-based.

Why is Chia Seed Pudding So Healthy?

Along with hemp and flax, chia seeds are one of my favourite superfood ingredients. I like their interesting texture and that they are tasteless, which means I can stir them into anything for an added nutrition boost. Paired with Vitamin C-rich strawberries, which boost collagen production and immunity, you’ve got yourself a summer health and beauty elixir!

Here’s the science on chia seeds: 

  • Chia seeds have antioxidants that will make your skin glow.

  • You can get 20% of the recommended daily calcium amount from 2 tablespoons of chia seeds 

  • Chia seeds are high in protein and have all nine essential amino acids the body needs from food sources

  • They are heart healthy: packed with the omega-3 fatty acids and alpha-linolenic acids which have been shown to benefit cardiovascular health.

  • They regulate the “hunger hormone“, so you can feel more full and regulate your appetite!

  • They contain almost 40% fiber, which makes them one of the most fiber-rich foods in the world – AKA you’ll be full well-through lunch time. 

  • Chia seeds sooth the gut with a gelatinous coating and scrub away waste from the intestinal tract.

Strawberries & Cream Chia Pudding

Ingredients:

  • 1 1/2 cups fresh strawberries (green stems removed)

  • 2 cups almond milk (or milk of choice)

  • 1 tsp vanilla

  • 1 tbsp maple syrup

  • 1-2 scoops vanilla protein powder

  • 10 tbsp chia seeds

    To Serve:

  • Fresh strawberries

  • 1/4 cup plain Greek Yogurt

  • 1 tbsp hemp seeds

  • 2-3 tbsp granola

Directions:

  1. Begin by adding the strawberries, milk, vanilla, maple syrup, and protein powder to a blender. Blend on high speed until smooth and set aside.

  2. Grab a large storage container with a lid. Combine the strawberry mixture with the chia seeds. Stir very well.

  3. Put the lid on and place in the refrigerator for at least 8 hours, or overnight. Store in the refrigerator for up to 5 days, and stop with yogurt and sliced strawberries at meal time.
