Creamy Asparagus Pasta with bacon and basil

This Creamy Asparagus Pasta with crispy bacon and fresh basil and lemon is busting with spring flavours. There is something so comforting about a creamy pasta, but when you add seasonal fresh asparagus, spring onion, garlic and lemon, you get a hearty AND healthy meal that the whole family will love. This one takes less than 30 minutes to make and you’ll be dreaming of the leftovers the day.

Creamy Asparagus Pasta with bacon & basil

Ingredients:

  • 7 oz diced Pancetta or Bacon

  • 12.5 oz Linguine or Spaghetti

  • 300g Asparagus, woody ends removed and chopped into 1.5” lengths

  • 3 Spring onions, sliced and separated into white and dark green parts

  • 3 garlic cloves, minced

  • 3/4 Chicken stock or Better than Bouillon

  • 150g Mascarpone cheese

  • 1/4 cup Parmesan, freshly grated

  • 1/4 cup Basil, roughly chopped, plus more to serve, if desired!

  • 1/2 Lemon juice

  • S&P to taste

Directions:

  1. Bring a large pot of salted water to a boil. Add the bacon to a large pan set to medium heat and cook until crispy.

  2. Add the pasta to the boiling water and cook until just al dente. At the same time, add the asparagus to the pan with the bacon. Fry until beginning to soften 3-4 minutes. Add the garlic and the white/light green onion to the pan and cook for 1 more minute.

  3. Add the chicken stock and stir in the mascarpone until it melts. Add in the basil, the dark green onion slices, the parmesan cheese and the lemon juice. Season to taste with S&P. Allow the sauce to bubble and thicken.

  4. Transfer the pasta to the sauce and allow the sauce to further cook the pasta and absorb the sauce for another 2-3 minutes. The sauce should get creamy and glossy and cling to the pasta.

  5. Serve the pasta with more basil, parmesan and a wedge of fresh lemon!
