I love this recipe exactly as is, but here are a few different ways that you can customize your cookie bark:

Peanut Butter: Stir in 1-2 tbsp of peanut butter into the mixture for a chocolate-peanut butter bark. You may not need as much water with the peanut butter included.

Double Chocolate: Use chocolate protein powder for an extra chocolate-y protein cookie dough bark.

High Protein Cookie Dough Bark

Ingredients:

  • 1/2 cup almond flour

  • 1/2 cup vanilla protein powder

  • 1/4 cup melted coconut oil

  • 2 tbsp honey or maple syrup

  • 2-4 tbsp water

  • 1 heaping 1/4 cup chocolate chips

  • Flaky sea salt

Directions:

  1. Add almond flour, protein powder, ¼ cup coconut oil and honey (or maple syrup to a medium mixing bowl. Stir to combine. When adding the water, add it 1 tbsp at a time until you get the desired consistency. You don’t want it too crumbly, but you don’t want it sticky either.

  2. Add 1 ½ Tablespoons of chocolate chips to the dough and stir to incorporate.

  3. Place cookie dough on a small parchment lined baking sheet and press it into a rectangular shape

  4. Add remaining chocolate chips with ½ teaspoon coconut oil to a microwave-safe bowl and microwave in 15-second increments until fully melted.

  5. Spread melted chocolate on top of the cookie dough in a thin layer. Sprinkle on a little flaky sea salt, if desired and pop the bark into the freezer for the chocolate to set, about 30 minutes- 1 hour. Cut into pieces and enjoy. Store in an airtight container in the refrigerator or freezer.

 

Storage

Store the bark in the freezer, in an airtight container or wrap individual pieces in parchment paper for easy grab-and-go options when you are on the fly!
