The MOST delicious chicken you will ever have!

These Lemon Butter Chicken Skewers will be on repeat in our house over the coming months! Not only are they so simple to make, but the flavours are totally insane! Say buh-bye to boring chicken dinners!

The marinade is just a 5 ingredients: olive oil, lemon juice, white wine, salt & pepper. The you just thread the chicken onto skewers and give them a good toss in that crunchy and seasoned panko mixture. It’s a total vibe that you will want to get on board with.

The panko makes the chicken super crispy and crunchy while that marinade keeps the chicken tender and juicy!

I cooked these in the oven because it’s still too cold for me to venture out to my BBQ. But grilled, these would be amazing!

Lemon Butter Chicken Skewers perfect for any night of the week.


Lemon Butter Chicken Skewers

Ingredients:

  • 6-7 bamboo skewers

  • 3-4 lb boneless chicken breasts or thighs, cut into cubes, roughly 1”.

  • 2/3 cup olive oil

  • 1/2 cup white wine (or sub chicken stock)

  • 2 tbsp fresh lemon juice

  • 1 tsp ground black pepper

  • 2 tsp kosher salt

  • 1 tsp red pepper flakes

  • 1 tbsp dried oregano

  • 1 tbsp garlic powder

  • 1 1/2 cups panko breadcrumbs

  • 1 cup freshly grated Parmesan cheese

    Sauce:

  • 1/2 cup salted butter, melted

  • 3-4 tbsp fresh lemon juice.

Directions:

  1. Place your skewers in water to soak. This will prevent them from burning in the oven or on the grill.

  2. Then, start by marinating the chicken by placing the chicken into a large bowl. Add the olive oil, white wine, lemon juice and salt & pepper. Stir to ensure all the chicken is coated. Set aside for at least 30 minutes.

  3. In another bowl, combine the panko breadcrumbs, red pepper flakes, oregano and Parmesan and toss to combine.

  4. Preheat the oven to 400F or the BBQ to medium high.

  5. Remove the chicken from the marinade and toss in the breadcrumb mixture until the chicken is evenly coated. Thread the chicken onto skewers (if using bamboo skewers, soak them when you start marinating the chicken.

  6. If grilling, flip the skewers every 4 minutes to ensure even cooking. Cook for approx 10 minutes. If baking in the oven, place the skewers onto a parchment lined baking sheet and bake for 12-15 minutes. Then turn the oven onto broil and broil each side for 1-2 minutes.

  7. Finish by basting with the lemon butter. YUM!
