Simple Meal Plan for Feb 18th
Welcome back to my weekly post where I share what I’m inspired to cook for the week, in hopes of inspiring you with easy weeknight dinner ideas.
I hope you had an amazing weekend! Phew! Ours was a whirlwind! What did YOU get up to? Did you travel? Did you make plans? Do tell all! We were in Collingwood for skiing and so much social. I need a bit of a rest, lol. I’m seriously considering giving up drinking for a bit. I am beat and the lack of sleep and jitters certainly isn’t helping. Any advice for the sober curious?
If you’ve been here since the beginning, you know that I share 3 (ish) dinner ideas and a fun recipe that might be a snack or a baking suggestion. I want to leave a little space in your calendar for meals out, take out on the way home from hockey practice or just a day to use up leftovers.
As always, there will be a grocery list included and maybe a few meal-prep-adjacent things that I’m into.
I am leaning towards including these meal plans in my weekly newsletter and sending them directly to you. I feel like it would make more sense for me to email you, instead of having to send you to the blog post. Thoughts on this?

I’ve included a grocery list for this meal plan. Let’s dive right into what you are cooking and eating this week, shall we?
15 Minute Luscious Boursin Pasta
You won’t believe how easy this pasta dish is to make and you'll want to make it again and again after you read this article from Food & Wine. Facts are facts and you’re going to want to eat it up.
Kale Caesar Salad
When you are in the mood for a hearty, yet bright salad that does double duty as a side or a main, you’ve got to make this Caesar Salad. Grab some crusty bread and dig in!
Shrimp Sushi Bowls
I can’t wait for you to try this recipe and to tell me how you liked it. My gang doesn’t love shrimp, so I threw some frozen chicken fingers into the airfryer for them, and we all got to have our own version of these deconstructed sushi bowls.
Date and Walnut Energy Bites
These are like energy ball on steroids. They are a little more sophisticated than their kid-friendly cousin…..they flavours have a bit more depth. They are crave worthy but also make you want to sit a savour them. Enjoy!
