Do you ever get halfway through making dinner only to realize there isn’t a single vegetable on the table? I do this all the time! I get so caught up in preparing the main dish that I often overlook the vegetables. The solution? Make these perfectly roasted air fryer vegetables when you need a super simple side dish recipe. The veggies come out a little sweet, a little charred and absolutely delicious! The airfryer makes perfectly roasted vegetables each and every time! Eating your veggies this way couldn’t be easier!

Why make veggies in the air fryer?

Cooking vegetables in the air fryer is a quick and easy side dish that also happens to be healthy AND delicious! It’s easier than grilled vegetables and requires minimal cleanup. And they turn out so delicious every time!

While it's easy to skip the veggies occasionally, I believe it's crucial for my kids to grow up seeing a variety of vegetables at every meal. This helps them understand that a balanced meal should always include them.

Whether you're looking for a healthy side dish or making vegetables the star of your meal, these air fryer veggies will quickly become your go-to solution.

Perfectly Roasted Air Fryer Vegetables

For this recipe, you can choose a wide variety of your favourite vegetables. As I write this, we are in the full swing of summer, so I picked up what was in season. I used bell peppers, summer squash, mushrooms, and red onion.

You can air fry just about any vegetable, including broccoli, cauliflower, squash, onions and more!

My favourite airfryer is the Ninja. I also have a dual basket air fryer which is great for my family of 5. I love that we can cook different things, at different temperatures in the 2 baskets AT THE SAME TIME!!

Variations on air fryer vegetables

You can change up the vegetables depending on the season. Try this recipe with carrots or broccoli!

Add an even more flavour by sprinkling the veggies with chopped fresh herbs after cooking. My favourite is freshly chopped cilantro!

Finish with grated parmesan.

Or drizzle with a little balsamic glaze for the win!

Perfectly Roasted Air Fryer Veggies

Ingredients:

  • 1 green bell pepper, seeded and chopped into 1” pieces

  • 1 red bell pepper, seeded and chopped into 1” pieces

  • 1 yellow summer squash, chopped into 1/2” half moons

  • 1 small red onion, quartered

  • 4 oz cremini mushrooms, halved if large

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp cumin

  • 1/4 tsp red pepper flakes (optional)

  • S&P to taste

Directions:

  1. Preheat your Air Fryer to 380F.

  2. Wash and chop all the vegetables. Place the vegetables into a large bowl and drizzle with olive oil. Season with onion powder, garlic powder, cumin and S&P. Toss well to combine.

  3. Cook the vegetables in a single layer (working in batches if necessary) for 8-10 minutes, shaking the basket 1/2 way through cooking time.

  4. Serve and enjoy!
