Quick Pickled Veggies
Ingredients:
1 cup of vinegar (any vinegar will do….apple cider, white wine, malt)
2 cups boiling water
1/3 cup granulated sugar
3 tbsp kosher salt
Peppercorns (don’t fuss with measuring these. Just sprinkle them in)
Herbs (I like dill, but thyme and rosemary all work too)
A sliced veggie of your choice!
Directions:
1. Slice the vegetables, then add them to a glass jar with a tight fitting lid.
2. Mix the rest of the ingredients together and pour the brine over the vegetables. You can pickled just about any vegetable you like!
3. Store them in the fridge. They last a while!
