Sausage and Pepper Pasta

One-pot sausage tomato pasta recipe – nothing beats a creamy, perfectly spiced tomato sauce, packed with red pepper and sausage. It’s the kind of meal that you’ll want in your back pocket! Not only is it a delicious, quick, and an easy skillet meal, it’s gluten free and perfect for busy weeknights.

Got leftover sausage? Got a jar of marinara in your pantry? Then this is your dish! It’s easy to pull together. It takes no time at all! (well…about 20 minutes, to be exact)

This dish as a whole is something that I never get tired of eating, plus it’s incredibly easy to switch up the spicing, protein or veg to truly make this your own.


Sausage and Sweet Pepper Pasta

Ingredients:

  • 2 tbsp olive oil

  • 1 lb sausages (either pre-cooked, sliced into rounds, or if raw, removed from casings)

  • 1 red pepper chopped into chunks

  • 1 small onion, diced

  • 1 clove of garlic, minced

  • 1 tsp smoked paprika

  • 2 tsp dried oregano

  • 1/2 tsp dried chilli flakes

  • 1 jar marinara sauce, I used @raoshomemade

  • 1/4 cup chicken stock

  • 1 Ib pasta

  • 4 tbsp cream cheese

  • 4 tbsp parmesan

  • pinch salt and pepper. my go-to brand is Maldon

  • large handful fresh basil

Directions:

  1. Put a large pot of water on to boil. When boiling, salt the water well and then add the pasta. Cook according to package directions.

  2. If using pre-cooked sausage slice into rounds. If using raw sausages, remove the sausages from their skins and break into smaller chunks - almost like little sausage meatballs!

  3. Heat the oil in a large pan or dutch oven over a medium heat.

  4. Add the sausage chunks, onion, garlic and red pepper to the pan and fry until slightly browned (5 minutes should do it).

  5. If using pre-cooked sausage, add them to the skillet after the veggies have cooked for about 5 mins. Stir in the smoked paprika, oregano and chilli flakes and cook for a couple of minutes more. Deglaze the pan with the stock and let simmer for 2-3 mins.

  6. Pour in the marinara.

  7. Spoon in the cream cheese and parmesan and stir through to get a creamy thicker sauce.

  8. Season with salt and pepper, stir in, then finish with julienned or torn fresh basil.
