Sesame Miso Edamame ‘Spoon’ Salad

As the warm weather continues, I find myself gravitating towards light, refreshing meals that are both satisfying and full of flavour. Yesterday, I whipped up a salad that checks all those boxes and more: my Sesame Miso Edamame ‘Spoon’ Salad. This crunchy, vibrant dish is perfect for summer and, as the name suggests, best enjoyed with a spoon!

The main ingredients that go into my sesame miso edamame salad, including shelled edamame, cucumbers, sugar snap peas, green onion, miso paste, garlic and ginger.

Is this Sesame Miso Edamame Salad Healthy?

Not only is this salad delicious, it boasts so many health benefits that you can feel good about:

Edamame: Edamame are young soybeans and are a powerhouse of plant-based protein, making them an excellent addition to any meal. They’re also rich in fiber, which aids in digestion and helps keep you feeling full. Edamame is loaded with vitamins and minerals like folate, vitamin K, and iron, contributing to overall health and wellness.

Cucumber: Hydration is key, especially in the summer, and cucumbers are about 95% water, making them a great way to stay refreshed. They’re also low in calories but high in important nutrients like vitamin K and antioxidants, which help fight inflammation.

Sugar Snap Peas: These sweet, crunchy peas are not only currently in season AND delicious but also packed with vitamin C, which is essential for immune function. They’re also a good source of fiber and vitamin A, supporting healthy skin and vision.

Miso: This fermented soybean paste adds a depth of flavour to the dressing while also offering some serious health perks. Miso is rich in probiotics, which are beneficial for gut health. Sesame Miso Edamame ‘Spoon’ Salad

Ingredients:

  • 1 English cucumber or 5-6 Persian cucumbers, diced

  • 500g shelled edamame, thawed if frozen

  • 1 cup sugar snap peas, thinly sliced

  • 4 green onions, thinly sliced

Sesame Miso Dressing

  • 1/4 cup sesame oil

  • 2 tbsp rice vinegar

  • 2 tbsp maple syrup

  • 2 tbsp soy sauce (or tamari/coconut aminos)

  • 2 tbsp white miso paste

  • juice of 1/2 lime

  • 1 garlic clove, minced

  • 1 tbsp minced ginger (or 1/2 tsp ground)

  • 1/2 tsp ground black pepper

  • 2 tsp sesame seeds

Directions:

  1. Combine the salad dressing ingredients and whisk well to incorporate. Taste and adjust seasoning as needed.

  2. Add the edamame, sugar snap peas, green onions and cucumber into a mixing bowl.

  3. Pour the dressing over the salad and mix well. Serve chilled immediately with a spoon!

    Storage: store in an air tight container in the fridge for up to 4 days.
