One of the things I love about this recipe is how adaptable it is. Whether you need it to be gluten-free or dairy-free, you can make a few easy swaps to suit your needs without sacrificing flavor:
Gluten-Free Option: To make this recipe gluten-free, ensure that the chili crisp you are using is gluten-free. Choose gluten free Panko breadcrumbs.
Dairy-Free Option: The spicy mayo can be made dairy-free by using a plant-based mayonnaise. The chili crisp and the rest of the ingredients are already naturally dairy-free, so this swap is simple and delicious.
Spice adverse?: No problem! Simply mix the panko with sesame oil, instead of the chili crisp oil. And you can mix the mayo with just lime juice. As someone who doesn’t love too much spice, this was the perfect amount of ‘kick’.

Sheet Pan Chili Crisp Salmon
Ingredients:
For the Sesame Scallion Rice:
1 1/2 cups white jasmine rice, rinsed
1 tbsp sesame oil
1 bunch green onion/scallions, sliced (ends discarded)
2 1/2 cups chicken broth or stock.
For the Salmon and snap peas:
4 salmon filets
1 cup panko breadcrumbs
1 jar chili crisp (I used @momofuko)
S&P
1 lb snap peas
1 lime
1/2 cup mayo
Optional: sesame seeds
Directions:
Preheat your oven to 400F.
Start with your rice. Rinse the rice until the water runs clear. In a saucepan with a tight fitting lid, add 1 tbsp sesame oil and the sliced scallions. Give these a little stir and then add the rinsed rice and continue stirring until everything to well coated. Add in the 2 1/2 cups of chicken stock. Bring to a boil, then reduce the heat, cover and simmer for 12-15 mins.
Then grab your sheet pan and line it with parchment paper. Place the 4 filets on one end of the sheet pan and sprinkle with S&P. In a medium bowl, add the 1 cup of panko breadcrumbs. Now, depending on your tolerance for spice, either add 1 tbsp of the chili crisp oil AND 1 tbsp of the crunchy stuff at the bottom. OR, if you like it less spicy, add 1 tbsp of the crunchy stuff at the bottom and 1 tbsp sesame oil. Stir until this mixture is well combined and then top each piece of salmon with the spicy panko.
On the other half of the sheet pan, add the sugar snap peas and toss them in 1 tbsp sesame oil and a pinch of salt. If using sesame seeds, sprinkle those on top. Bake in the oven for 12-15 minutes, depending on the size of your salmon. If you are using a meat thermometer, it should read between 125F-130F.
While the salmon and peas are roasting, make the spicy mayo by stirring together the mayo, 1 tbsp of the chili crisp oil and the juice from 1/4 of a lime (about 1 tsp).
To serve, fluff up the scallion rice with a fork. Make bowls with the rice, salmon, snap peas and the spicy mayo.
