The combination of roasted sausages, sweet potatoes, carrots, and apples creates a dish that's both savory and sweet, with each bite bursting with autumn goodness. The miso adds a super subtle flavour that blends beautifully with the acidity of the apple cider vinegar. I serve mine on a bed of fresh spinach and finished with a squeeze of lemon, it makes for a low-carb, high-protein meal that’s deliciously satisfying. But if you need an even heartier option, make up a batch of rice to pile the sausage and roasted veggies onto!

Sheet Pan Sausage, Sweet Potato & Apples

Ingredients:

  • 1 1/2 lbs sweet potatoes, peeled and cubed into 1” pieces

  • 2 carrots, sliced

  • 1 lb mild Italian sausage (you can also go for hot Italian or even garlic!)

  • 2 tbsp olive oil

  • 1 tbsp miso paste

  • 1 tbsp Dijon mustard

  • 1 tbsp maple syrup (or honey)

  • 1 tbsp apple cider vinegar (or any light white vinegar)

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • 1 tsp salt & pepper

  • 2 apples, chopped into wedges

  • 5 oz baby spinach

  • more olive oil for drizzling

  • 1 lemon

  • optional: chopped fresh parsley or parmesan for garnish

Directions:

  1. Preheat the oven to 425F. Line a large sheet pan with parchment paper.

  2. Onto the sheet pan, toss together the sweet potatoes, the sliced carrots, the miso, honey, dijon apple cider vinegar, the thyme and oregano, S&P and using your hands, smoosh the miso and dijon all over everything. You can do it. It’s a bit messy.

  3. Prick each sausage 3 times with a fork and put into the oven to roast for 20 minutes.

  4. Remove the sheet pan after 20 minutes and transfer the sausages to a cutting board. Slice the sausages on the diagonal. Place the sausages back onto the sheet pan with the apples. Roast for 15-20 more minutes, until the carrots are fork-tender.

  5. Remove from the oven and sprinkle with any fresh herbs you have, drizzle with olive oil and maybe some parmesan.

  6. Serve on a bed of spinach with a squeeze of fresh lemon juice and enjoy!
