10 minute Boursin Gnocchi
What if I told you that this is essentially just a giant spinach salad in disguise? You won’t believe how much spinach is hidden in this mouthwatering Boursin Gnocchi with Sun-dried Tomatoes!
By now, you know our family’s love affair with gnocchi: the Italian dumplings made from potatoes, are a comfort food lover's dream. Soft, pillowy, and incredibly versatile, they can be paired with a wide variety of delicious sauces.
Gnocchi are gluten-free, making them a wonderful pasta option for those with celiac disease or gluten-intolerant.
Today, we’re making a 10-minute meal that you won’t soon forget! Introducing a flavour-packed recipe that will elevate your gnocchi experience to a whole new level!
We melt creamy Boursin, with garlic to create a mouthwatering sauce. Then chop up some sun-dried tomatoes to stir through the sauce and a full clamshell worth of spinach to add freshness.
This is one dish that is surprisingly easy to make, perfect for both weeknight dinners and special occasions.
10 Minute Boursin Gnocchi
Ingredients:
2 packages gnocchi
2 wheels of Boursin Cheese (Herb and Garlic)
1/3 cup whipping cream
1 cup chicken broth
1 170 oz jar sun-dried tomatoes, chopped
4 cloves garlic
4 BIG handfuls spinach
Basil for garnish
Parmesan for topping
Directions:
Start by putting a large pot of water on to boil. While the water boils, make your sauce.
Heat a large frying pan over medium meat. Add olive oil and some oil from the sun-dried tomatoes. Toss in the minced garlic and cook for 30 seconds. Add 1 cup of chicken stock to deglaze the pan, and the Boursin cheese. Continue to cook until the cheese melts. Add in half a cup of cream, the sun-dried tomatoes, and almost a full clamshell of spinach and cook until spinach is wilted.
Cook gnocchi according to package instructions, these don’t take very long at all. Reserve 1/2 cup pasta water. Add gnocchi to Boursin sauce and mix well, and add pasta water as needed to thin out sauce.
Top with fresh basil and parmesan. That’s it! Hit the timer - did you make it in 10 mins?
This dish served our family of 5 with lots of leftovers for lunches. You can 1/2 the recipe if you are feeding fewer people.
