15 Minute Luscious Boursin Pasta

This 15 minute delicious Boursin pasta dish is a crowd pleaser.

Meatless Monday is looking good with this luscious Boursin Pasta!

Is there anything better than coming home after a long day and sitting down to a comforting bowl of pasta? Or knowing that the whole family is loving the dinner that took you less than 20 minutes to get on the table? I don’t think so.

This Luscious Boursin Pasta is filled with fresh ingredients, with the star being, of course, the Boursin cheese, but let us not forget the sun-dried tomatoes and the fresh basil!

The sauce comes together while the pasta is cooking. Don't forget to reserve some of that pasta water, and by the time you drain your noodles, your pasta is ready to dive into and totally crave-able!

15 Minute Luscious Boursin Pasta

Ingredients:

  • 8 oz pasta of choice

  • 5 oz jar of sliced sun-dried tomatoes in olive oil

  • 2 shallots, thinly sliced

  • 3 cloves of garlic, minced

  • 1 block of Boursin cheese (herb and garlic)

  • 6 oz baby spinach

  • Freshly grated parmesan

  • Fresh basil leaves

  • S&P to taste

Directions:

  1. Put a large pot of water on to boil. When boiling, generously salt the water and begin cooking your pasta according to package directions.

  2. In a large skillet, add the whole jar of sun-dried tomatoes and shallots and cook stirring for approx 5 mins. Add the garlic and cook for one more minute. Add in the spinach and basil and cook until the spinach is wilted.

  3. Add in the Boursin with 1 cup of the pasta water. Cook on low heat until the cheese has melted.

  4. Add in the drained pasta. Top with lots of parmesan and S&P. Serve and Enjoy!

Enjoy!
