Basil Cashew Chicken

This is a perfect Sunday night meal for busy families!


This version is made gluten-free and dairy-free. Super easy for any night of the week, made in one dish, all healthy ingredients and will quickly become a family favourite!


Basil Cashew Chicken

Ingredients:

1 lb chicken breasts

2 heaping teaspoons of tapioca flour or any gluten-free flour

1/2 cup roasted unsalted cashews, chopped into pieces 

1 bell pepper, chopped (I used a mix of red, orange and yellow)

1/2 cup basil, chopped

For the Sauce: 

1/3 cup honey

1/3 cup soy sauce

2 tbsp ketchup

1 clove of garlic, minced

1/4 tsp each, chili powder, ground ginger, paprika

1/2 tsp garlic powder

S&P to taste

Directions:

1. Prepare a serving of rice according to package instructions. 

2. Mix together sauce ingredients in a small bowl and set aside.

3. Cut the chicken into smaller 1 inch pieces and add to a bowl. Coat with the flour

4. Heat a large skillet with sesame oil. Then add each piece of chicken. Cook for about 3 mins on each side.

5. Add in the peppers, basil, cashews and sauce to the skillet. Mix well.

6. Cook for another 5-7 mins until the sauce is mostly absorbed. 

7. Serve with the rice and garnish with extra basil.
