And the magic of the sheet pan means that the Brussels sprouts and potatoes they soak up all the delicious pork drippings, as they roast, transforming into caramelized, crispy bites of heaven. The potatoes turn golden brown and crispy on the outside while staying fluffy inside, while the Brussels sprouts get those irresistibly crispy edges that make them totally addictive.

Sheet Pan Marinated Pork Tenderloin with Brussels and Potatoes

Tools: Sheet Pan | Cutting Board | Chef’s knife

Ingredients:

Marinade:

  • 2 pork tenderloins

  • 1 cup orange juice

  • 1/2 cup soy sauce (can sub coconut aminos)

  • 1 tsp garlic powder

  • 1/2 tsp lemon-pepper seasoning

For the Vegetables

  1. 11/2 lbs baby potatoes, cut in half

  2. 1 lb brussels sprouts, trimmed and cut in half

  3. olive oil

  4. S&P

    Directions:

    1) Combine all the marinade ingredients into a ziplock bag and marinate for at least 4 hours or overnight.

    2) Preheat the oven to 425F.

    3) Toss the potatoes and the brussels sprouts onto a parchment lined baking sheet with a a drizzle of olive oil and salt & pepper. Spread the veggies in an even layer and roast in the oven for 20 minutes.

    4) Give them a stir and make room for the pork tenderloins, shaking off as much marinade as possible. Return the sheet pan to the oven for another 12-16 minutes or until the internal temperature of the pork tenderloin is about 140F.

  5. While the pork roast, place the marinade into a small pot and bring to a boil on the stovetop. Once it boils, reduce the heat to a simmer.

  6. Let the pork rest for 5 minutes before slicing it.
