Thai inspired Basil Chicken Lettuce Cups

Hello everyone! I hope you are making it through this short week! The week after Thanksgiving is all about pulling back and reintroducing a ton of veggies and lighter flavours for me. I go full out on Thanksgiving - give me the gravy! Pass the potatoes! I’ll take one of EACH dessert! I don’t regret it (too much) but now I crave lighter fare.

And these Thai Basil Chicken Lettuce Wraps are packed with flavour and protein. It’s an easy gluten-free meal made in under 30 minutes with mostly pantry staples and a few fresh ingredients like ground chicken and fresh basil. Add in some Asian-inspired spices, and you have a healthy and delicious meal the whole family will love. 

My family loves anything with a Thai twist, and this easy chicken lettuce wrap recipe has become one of their favourite meals. One of my daughter’s is having some skin and digestive concerns, so we are experimenting with a gluten-free diet for her. I don’t know much about this - other than I know gluten can be extremely triggering for some people. It’s HARD to send lunches to school without bread! If anyone has any input on this, I’d be so grateful!

Anyways, I promise - you will not regret making these! They hit the spot across all the food preferences over here….I did make a pouch of rice for my son (remember: beige food diet?! lol). Try these and watch them become your family favourite too.


Basil Chicken Lettuce Cups


Ingredients:

  • 1 cup packed basil leaves 🍃 

  • 1 lb. ground chicken breast

  • 2 shallots peeled and finely diced

  • 1/2 red bell pepper finely diced

  • 2 green onions thinly sliced

  • 2 tbsp. avocado or olive oil

  • 2 cloves of garlic minced

  • 2 tbsp. fish sauce

  • 2 tbsp. lime juice

  • salt and pepper to taste

  • 1 head of butter lettuce

  • **If you like it a bit spicy, add in some red chilies. My kids can’t handle the heat so I didn’t include this. 

Directions:

  1. Heat the oil in a large skillet. Add the shallot and diced red bell pepper, saute for 2 minutes. Add the garlic, saute for 30 seconds or until fragrant.

  2. Add the ground chicken to the skillet and using the back of a spoon, break up the meat and cook meat until it is just cooked through, about 5-7 minutes. Season that meat with salt and pepper.

  3. Turn heat down to low. Add your sliced chilies 🌶 (if using)and green onions. Roughly chop your basil and add that in as well.

  4. Now add your fish sauce and lime juice. Stir in and cook 1-2 more minutes. Serve in lettuce cups, enjoy!
