Weeknight Sheet Pan Chicken Fajitas

There is truly nothing better than this meal. I need you to pinky swear that you will try these Sheet Pan Chicken Fajitas this week! It’s so insanely easy to make, but also wonderfully delicious! Of course you can serve it as it’s written, but if you’re feeling like walking on the wild side, how about turning this goodness into a a fajita salad or a fajita burrito or even some fajita quesadillas! Can you tell i’m channelling all my Tex Mex vibes?

Feel free to use your favourite store bough taco seasonings to save time, but if you’ve downloaded my free Pantry Staples Checklist, you might already have what you need on hand!

After you make this, you’ll want to get your besties on the phone and book a flight somewhere special. Olé!


Weeknight Sheet Pan Chicken Fajitas

Ingredients:

  • 2 large boneless skinless chicken breasts sliced (against the grain) into 1/2-inch thick strips (or just buy the pre-cut tenders)

  • 3 bell peppers, any colour. I used green, yellow and red. Cored and sliced into strips.

  • 1 onion, thinly sliced into 1/2 moons

  • 2 garlic cloves, minced

  • 3 tbsp neutral oil, such as avocado oil.

  • 1 lime

  • 1/4-1/2 cup fresh cilantro, roughly chopped

  • 8-10 small tortillas

  • And any of your desired toppings (I desire them all….sour cream, sliced avocado, salsa, shredded cheese, hot sauce, pickled red onions, etc.

    Fajita Seasoning Mix:

  • 1 Tablespoon chili powder

  • 1 1/2 tsp paprika

  • 1 1/2 tsp cumin

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1/4 tsp oregano

  • 1/4 tsp cayenne (or to taste)

  • 1/2 tsp salt

Lime Crèma

  • Mix together: 1/2 cup sour cream, zest and juice of 1 lime. S&P to taste.

Directions:

  1. Line a sheet pan with parchment. Preheat the oven to 425F. 

  2. Combine seasoning ingredients together in a small bowl. Sprinkle most of the seasoning all over the chicken and some seasoning over the veggies. Spoon the minced garlic over the chicken and drizzle everything with olive oil. Toss everything well and spread it out in an even layer across the sheet pan.

  3. Place the sheet pan into the oven and cook for 15-20 minutes or until the chicken is cooked through.

  4. Wrap the tortillas in foil and place in the oven to warm during the last 5 minutes of cooking.

  5. Remove the sheet pan from the oven. Squeeze fresh lime juice all over the chicken and vegetables and sprinkle with the chopped cilantro. Serve in the warmed tortillas with that incredible lime crèma and all your favourite toppings!
