Crispy Airfryer Taquitos
I made these delicious Cheesy Chicken Taquitos the other night, thinking that we would eat them for dinner, but they got inhaled by my people as they came out of the air fryer! Needless to say, these make either an easy dinner or a fabulous appetizer!
These taste great as-is, or dipped in salsa, guacamole or sour cream.
If you can’t find Monterey Jack cheese, you can sub Colby cheese or even just mozzarella.
This is a fun twist for taco night. Let me know if you give this one a try!
Crispy Airfryer Taquitos
Ingredients:
1 cup mix sweet peppers and onions (approx 1/2 red, 1/2 green and 1/2 onion), diced small
1 tbsp olive oil
10 oz shredded chicken, cooked. I used a rotisserie chicken
1/2 cup Monterey Jack cheese, shredded
1 tsp taco seasoning, homemade or store-bought.
8 flour tortillas (sub corn if gluten free)
Directions:
In a medium skillet over medium-high heat, add the olive oil and sauté the peppers and onions together with the taco seasoning until they soften. Approx 7 mins.
Preheat your air fryer to 400F. Oven instructions below.
To Assemble: On a flat surface, to each tortilla, add a layer of shredded cheese, some chicken and the vegetable mixture. Roll each tortilla up tightly. Arrange them seam-side-down as you continue with your remaining tortillas. Spray the outside of the tortilla with cooking spray. I like this one.
Cook for 7-9 minutes or until they are at your desired crispiness!
Serve with salsa, guacamole, and enjoy!
For Oven Instructions:
Preheat the oven to 400F. Brush with oil or spray with avocado oil and cook for 10-15 minutes, rotating 1/2 way through cooking time.
