Kale Crunch Salad with Apple Cider and Dijon Vinaigrette

This Kale Crunch Salad is just like the one from Chick-Fil-A but so much better!

I don’t always crave salads, but this Kale Crunch Salad with toasted, salted almonds is one of the best salads I’ve made. Not only is it simple to prepare, but it was truly addicting - all that crunch was so satisfying!

There is nothing better than overeating on something you know your body will thank you for later! Goodness knows I’ve over-indulged in things I’ve regretted more than my fair share of times!

With just 3 simple ingredients: kale, cabbage and sliced almonds, you can’t go wrong with this 10 minute salad.

The best part of kale and cabbage is that they are fairly hardy as far as lettuce goes, so this salad lasts for 2-3 days in the fridge!

Kale Crunch Salad

Ingredients:

  • 1/2 of a small head of green cabbage, shredded

  • 1/2 of a head of curly kale, shredded

  • 1 cup of slivered almonds

  • 1 tbsp olive oil

Vinaigrette Ingredients:

  • 1/3 cup olive oil

  • 1/4 cup maple syrup

  • 3 tbsp apple cider vinegar

  • 2 tbsp white wine vinegar (distilled vinegar will do)

  • juice of 1 lemon

  • apple cider vinegar

  • 1 tsp S&P

  • 1 tbsp dijon

Directions:

  1. Place the kale and the cabbage in a large bowl. Sprinkle the kale with a pinch of salt and a drizzle of olive oil. Gentle massage.

  2. To a small skillet, heat the olive oil and when hot, add the almonds. Watch them closely as they will burn quickly! Let them cook until browned, shaking the pan occasionally. Remove from the heat and sprinkle with more salt.

  3. To make the vinaigrette: place the olive oil maple syrup, vinegars, lemon, dijon, S&P in a jar with a tightly fitting lid and shake to combine.

  4. Pour the dressing all over the lettuces and use your hands to massage it in. Top with the almonds and enjoy!

    Makes a perfect 10-minutes side salad!
