Seed Loaf (aka Shit Your Pants Bread 💩)

the most delicious seed bread that I call my shit your pants loaf

Call it what you will, this bread will change your life!

This chewy, hearty and delicious seed loaf was originally posted to my Instagram back in the early days (before I had a blog) and some of my friends coined it the ‘$hit your pants loaf’! It’s filled with good-for-you seeds and nuts, and psyllium for the ultimate effectiveness….if you get my drift! I’m telling you, it’s effective AND delicious!

You’ll love that it’s both chewy and crunchy. I love to give it a smear of butter or nut butter and enjoy it for breakfast. This loaf takes minimal work, a little bit of patience and a little faith in the process. But your digestion will thank you!


Seed Loaf (aka Shit Your Pants Bread 💩)

Ingredients:

  • 1 cup sunflower seeds

  • 1/2 cup slivered almonds

  • 1/2 cup flax seeds

  • 1 1/2 cups rolled oats

  • 3 tbsp psyllium husks

  • 2 tbsp chia seeds

  • 1 tbsp maple syrup

  • 3 tbsp melted coconut oil

  • 1 1/2 cups water

Directions:

  1. In a bowl, mix together all the dry ingredients. Add in the maple syrup, melted coconut oil and water. Mix well until everything is completely soaked and very thick. Place the mixture into a flexible loaf pan and smooth the top. (*see note)

  2. Let the mixture sit on the counter at room temperature for at least 2 hours or overnight.

  3. Preheat the oven to 350F.

  4. Bake for 20 minutes Remove from the oven and place upside down on a cooling rack.

  5. Then return to the oven for another 15 minutes. Remove from the oven and allow to cool completely before slicing into it.

    Enjoy!

 

Notes:

A silicone baking pan is best because it can help you remove the loaf more easily and to check for doneness, but if you don’t have one, a regular loaf pan is fine.

The loaf holds its shape because of the chia seeds and the psyllium husks. Try not to substitute these out. If you have a nut allergy, you can replace them with seeds.
