Pumpkin Loaf Gluten&Dairy Free
It’s Fall, y’all! 🍂. Time to bring out alllll the pumpkin goodness! Here is a gluten free loaf that is absolutely perfect for weekend snacking.

Pumpkin Spice Loaf Cake
Ingredients:
1 1/2 cups pumpkin purée
4 eggs @braeburnfarms
1/3 cup coconut oil
1 tsp vanilla extract
1 cup coconut sugar
2 cups almond flour
1/2 arrowroot starch or rice flour
2 tbsp coconut flour
1/2 tsp baking soda
1 tbsp pumpkin spice
1/2 tsp salt
1/4 cup pumpkin seeds
Directions:
Preheat the oven to 350F, grease your loaf pan and line with parchment paper
In a large bowl, whisk together the pumpkin, eggs, coconut oil, vanilla and the coconut sugar. Then add the remaining ingredients.
Pour the batter into the prepared pan and smooth down the top with the back of your spoon. Sprinkle the pumpkin seeds on top.
Bake for 65-70 mins, until a toothpick comes out clean. Allow to cool.
