Pumpkin Loaf Gluten&Dairy Free

It’s Fall, y’all! 🍂. Time to bring out alllll the pumpkin goodness! Here is a gluten free loaf that is absolutely perfect for weekend snacking.

Pumpkin Spice Loaf Cake

Ingredients:

  • 1 1/2 cups pumpkin purée⁠

  • 4 eggs @braeburnfarms⁠

  • 1/3 cup coconut oil⁠

  • 1 tsp vanilla extract⁠

  • 1 cup coconut sugar⁠

  • 2 cups almond flour⁠

  • 1/2 arrowroot starch or rice flour⁠

  • 2 tbsp coconut flour⁠

  • 1/2 tsp baking soda⁠

  • 1 tbsp pumpkin spice⁠

  • 1/2 tsp salt⁠

  • 1/4 cup pumpkin seeds⁠

Directions:

  1. Preheat the oven to 350F, grease your loaf pan and line with parchment paper⁠

  2. In a large bowl, whisk together the pumpkin, eggs, coconut oil, vanilla and the coconut sugar. Then add the remaining ingredients.⁠

  3. Pour the batter into the prepared pan and smooth down the top with the back of your spoon. Sprinkle the pumpkin seeds on top. ⁠

  4. Bake for 65-70 mins, until a toothpick comes out clean. Allow to cool. ⁠
