Let's talk dinner solutions. When the calendar says spring but there's still a hint of chill in the evening air, we need meals that bridge the seasons. Something light enough to welcome longer days but comforting enough to ward off that lingering winter breeze. And of course, it needs to be quick because who has time for complicated cooking on a weeknight?

Why This Pasta Is Perfect for Midweek

At this stage in our lives, we're juggling a lot – work, family needs, and taking care of ourselves. This pasta dish delivers on multiple fronts:

  • It's gluten-free (because many of us are discovering new food sensitivities)

  • It's protein-packed from the shrimp (hello, muscle maintenance!)

  • It's loaded with broccoli (calcium and fiber, anyone?)

  • It feels indulgent but isn't heavy (no food coma afterward!)

  • It's on the table in under 30 minutes (because time is precious)

The beauty of this dish is in its simplicity. A few quality ingredients, minimal prep, and dinner is served!

Seasonal Swaps and Variations

One of the reasons I love this recipe is its flexibility:

  • In peak spring, add fresh asparagus or peas instead of (or alongside) the broccoli

  • Try different Boursin flavors – the Shallot & Chive version makes for a lovely variation

  • Add halved cherry tomatoes in summer for a pop of color and acidity

  • Stir in a handful of baby spinach right at the end for extra greens (my go-to)

30 Minute Boursin & Broccoli Spaghetti with Shrimp

prep time: 10 min | cook time: 30 min | serves: 4-5

Ingredients:

  • 1 lb shrimp (thawed, peeled, deveined). You can use raw or cooked (both instructions below)

  • 1 lb pasta - I used spaghetti, but any pasta will do

  • 1 head of broccoli, cut into florets

  • 1-2 packages of herb and garlic Boursin cheese (see note below)

  • 4 tbsp butter

  • 2 tbsp fresh lemon juice

  • 1/4 tsp red pepper flakes (or more to your taste)

  • 1/2 cup freshly grated parmesan cheese, plus more for garnish

  • Freshly chopped parsley for garnish

Directions:

  1. Start by bringing your pasta water to a boil in a large pot. Make sure it is heavily salted (it should taste like the sea).

  2. While the water is coming to a boil, season your peeled shrimp with a little salt and pepper.

  3. Add your pasta to the water and set THREE timers. 1. for the time the package of your pasta says. 2. for the time the package says, minus 3 minutes - this is when you’ll add the broccoli. 3. for the time your package says, minus 1 minute.

  4. When the first timer goes off, add the broccoli to the pasta. When the second timer goes off, add the shrimp. Gently stir to be sure the noodles aren’t sticking. When the third timer goes off, turn off the heat, and SCOOP OUT 2 CUPS OF PASTA WATER. Then drain the pasta.

  5. To the pot, add 1 package of Boursin, 1 cup of pasta water, 4 tbsp butter, 1 tsp salt, 1/2 tsp pepper, and 2 tbsp fresh lemon juice. Stir until the Boursin is melted and everything is creamy. Add the pasta, broccoli and shrimp back in. Toss it all together until it is well coated. Taster and keep adding a little more Boursin, salt or lemon juice until it is exactly how you like it.
