High Protein Cereal Crunch Bars

Ingredients

  • 1 cup chocolate chips

  • 1/4 cup coconut oil

  • 2/3 cup nut butter (I used almond butter)

  • 4 cups sugar free cereal

  • 3/4 cup chocolate protein powder

Directions

  1. Begin by melting the 1 cup chocolate chips and the 1/4 cup coconut oil together at 30 second increments in the microwave, stirring after each 30 seconds.

  2. Meanwhile, mix together the 4 cups cereal and the 3/4 cup protein powder.

  3. When the chocolate is melted, add the 2/3 cup nut butter to the chocolate and stir well until smooth.

  4. Pour the cereal mixture into the melted chocolate and stir until everything is coated in the chocolate.

  5. Transfer the mixture into a prepared 8 x 8 baking dish that is lined with parchment paper. Spread it in an even layer then transfer to the fridge to set for at least 30 minutes.

  6. Cut into 12 square and enjoy!
