Chocolate Nut Butter Quinoa Bars
Ingredients:
1 cup quinoa
1 cup melted chocolate
1/2 cup almond butter or nut butter of choice
1/4 cup coconut oil
2 scoops protein powder (I used vanilla flavoured Canadian Protein)
pinch of salt
Directions:
Begin by toasting the quinoa in a dry fry pan over medium high heat. The quinoa will start to pop a little like popcorn, and smell nutty. Remove from the heat.
Meanwhile, in a medium sized microwave safe bowl, melt the chocolate chips in 30 second increments, stirring in-between each time until fully melted.
Add the quinoa to the bowl with the melted chocolate, followed by the coconut oil, the nut butter and the protein powder. Add in a pinch of salt. Stir together well.
Transfer to a baking dish lined with parchment paper (for easy removal) and place in the freezer for 1 hour to set.
Slice into bars and store in the freezer for when you need a sweet treat!
