Easy Sheet Pan Mediterranean Chicken

Ingredients:

  • 1 tsp smoked paprika

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • 1 tsp dried parsley

  • 2 tbsp olive oil

  • 2 lbs boneless, skinless chicken thighs

  • 1 medium red onion, thinly sliced

  • 4 garlic cloves, roughly chopped

  • 2 pints cherry tomatoes

  • 2/3 cup kalamata olives

  • 6oz feta cheese, crumbled (approx 2/3 cup)

  • 1 lemon, for serving

  • 3 cups cooked rice, quinoa or grain of choice for serving

Directions:

  1. Preheat the oven to 400F. Line a sheet pan with parchment paper.

  2. Add the chicken, sliced onion, cherry tomatoes and garlic to the sheet pan.

  3. In a small bowl, combine the 1 tsp smoked paprika, 1 tsp dried oregano, 1 tsp dried basil, 1 tsp dried parsley, 1 tsp salt, 1/2 tsp pepper and 2 tbsp olive oil.

  4. Drizzle the oil mixture allover the contents of the sheet pan, using your hands to mix well.

  5. Bake for 35-40 minutes or until the chicken is cooked through or an instant read thermometer reads 145F.

  6. Sprinkle with feta and a squirt of lemon juice. Serve alongside your grain of choice.
