For me, the decision to make homemade marshmallows was born out of a desire to elevate the little moments. A cozy cup of cocoa feels indulgent when topped with these pillowy treats, and my kids? They think I’m a magician for making marshmallows from scratch!

Tips for Success
If you’re new to candy-making, don’t worry—this recipe is beginner-friendly! Here are a few tips to help you nail it:
1. Prep Your Tools: Be sure to have a candy thermometer on hand, prepare your pan with a generous amount of powdered sugar to avoid any sticking mishaps.
2. Use a Candy Thermometer: Temperature is key to achieving the right consistency, so invest in a good candy thermometer.
3. Patience Pays Off: Let your marshmallows set for at least 8 hours (overnight) for the best texture. By morning, you’ll have the most indulgent topping for your hot cocoa!
4. Make Them Your Own: You can customize these homemade marshmallows however you'd like! Add peppermint extract, swirl in melted chocolate, or colour with pink food gel! The options are endless!
Ina Garten’s 5-Star Marshmallows
Ingredients:
3 packages of unflavoured gelatine
1/2 cup cold water
11/2 cups sugar
1 cup light corn syrup
1/2 cup water
1 tbsp pure vanilla extract
pinch of salt
confectioner’s sugar for dusting
Directions:
Dissolve the 3 packages of gelatine in the 1/2 cup cold water in the bottom of your stand mixer or in a very large bowl. Let sit while you make your syrup.
In a tall sided pot, mix together over medium heat the 1 1/2 cup sugar, 1 cup corn syrup, 1/2 cup water, and pinch of salt. Then, increase the heat to high and simmer until the temperature reaches 240F. (use a candy thermometer)
With the mixer on low with the whisk attachment, add the sugar syrup into the dissolved gelatine. Increase the speed to high and whisk for 15 minutes. Add in the 1 tbsp vanilla and mix well.
With a sieve, generously dust a 9” x 9” baking dish with powdered sugar. Pour the mixture into the prepared pan and dust more powdered sugar. This part is sticky. Just go with it and do your best. Dust the top with more powdered sugar, then let sit overnight.
Turn the marshmallows out onto a cutting board and cut into squares, dust with more powdered sugar and enjoy!
