Sausage, Spinach and White Bean Soup

Ingredients:

  • 4-5 Mild Italian Sausage, casings removed

  • 1 medium onion, chopped

  • 2 garlic cloves, mince

  • 1 carton of chicken broth

  • 1 (280z) can of cannellini beans

  • 4 Roma tomatoes, diced

  • S&P

  • 2 giant handfuls of spinach

  • 2 generous handfuls of fresh, baby spinach, chopped

  • grated Parmesan cheese on top

Directions:

  1. In a large skillet over medium high heat, add the 4-5 sausages and use a wooden spoon to break it up into crumbles. When the sausage is almost cooked through, add in 1 diced onion and 2 minced garlic cloves. Continue cooking until the onion is translucent.

  2. Add in 1 carton of chicken stock, 4 diced Roma tomatoes and bring to a simmer. Taste for seasoning and if needed, add salt & pepper.

  3. Rinse and drain the 1 can of cannellini beans. Add them to the soup.

  4. Add the spinach and allow it to wilt. Stir in the parmesan cheese.

  5. Season with additional salt & pepper if needed and serve topped with more Parmesan. Enjoy!
