Creamy Lemon Pepper Chicken & Gnocchi

tender chicken is coated with a creamy and lemony sauce and served with gnocchi all in one pan under 30 minutes

This gorgeous gluten free dinner comes together in less than 20 minutes! All in one pot, tender chicken breasts are coated in a creamy, lemon sauce with hearty gnocchi and lots of bright spinach. This easy, skillet meal is a weeknight win!

Creamy Lemon Pepper Chicken & Gnocchi

Ingredients:

  • 2 large boneless skinless chicken breasts sliced in half to create 2 thin cutlets, approx the same size.

  • 1/2 tsp garlic powder

  • 1/2 tsp lemon pepper seasoning

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 2 garlic cloves, minced

  • 1/2 cup chicken broth

  • 1 tbsp lemon juice

  • 1 cup whipping cream/heavy cream

  • 1 lb gnocchi

  • 2 cups baby spinach

  • 1/2 cup grated parmesan cheese

Directions:

  1. Cut the chicken in half lengthwise to create 4 thin cutlets. Season each side of the chicken with the garlic powder and the lemon pepper seasoning.

  2. Add the butter and oil to a large skillet over medium-high heat Sear the chicken for 5-6 minutes until it is cooked through and golden. Transfer to a plate and set aside.

  3. Reduce the heat to medium and add the garlic. Cook for about 1 minute.

  4. Stir in the chicken broth and the lemon juice and scrap up any brown bits from the bottom of the pan.

  5. Add in the cream and the gnocchi and give it a good stir. Be sure to submerge the gnocchi. Let it cook for 5-6 minutes. The sauce will thicken as it cooks.

  6. Remove the pan from the heat and stir in the parmesan and the spinach. Allow the spinach to wilt and then add the chicken back into the skillet. Spoon some sauce over top.
