The most satisfying Italian Chopped Salad with a few bonus goodies!

The Iconic Italian Chop

Let’s capture the flavours of Italy, all in one iconic salad: The Italian Chop. Lately, the Mob Wife Aesthetic has been having its moment all over the internet, so let’s all channel our inner Carmela (circa Soprano’s era!) and make this well-crafted Italian Chopped Salad!

Winged eyeliner, tight black leggings, leopard print and fur all optional.


Italian Chopped Salad

Ingredients:

For the Salad:

  • 1 can of chickpeas, drained and rinsed

  • 1/2 red onion, sliced into half moons

  • 1 cup cherry tomatoes, halved

  • 4 oz salami, cut into ribbons

  • 4 oz cheddar cheese, cubed

  • 1/4 cup caper berries (can sub banana peppers or peppperoncini peppers if you like a little heat)

  • 1/2 cup pitted black olives (optional)

  • 1 bunch of kale, de-ribbed and finely chopped

  • 1 head of romaine, finely chopped

  • salt & vinegar chips

For the Vinaigrette:

  • 1/3 cup olive oil

  • 1/4 cup red wine vinegar

  • 2 tsp dijon mustard

  • 1 tbsp caper brine (or pepperoncini/banana pepper brine)

  • 1 tbsp mayo (optional)

  • 1 tbsp dried oregano

  • 1 large garlic clove, minced or grated.

  • 1/2 tsp salt

  • pinch of black pepper

    Directions:

  1. Add your dressing ingredients into a mason jar and shake to combine well. Taste and adjust the seasoning as needed.

  2. Place the chickpeas and 1/4 of the dressing into a large bowl. Toss to combine and set aside.

  3. Add the onion, capers, olives (if using), cherry tomatoes, salami and cheese to the bowl.

  4. Top with your two lettuces. Don’t toss it until you are ready to serve! You can do this up to 12 hours in advance!

  5. When you are ready to serve it, season the lettuce leaves with salt & pepper. Add the remainder of the dressing and toss to combine. Top with those salt & vinegar chips and dig in!!
