Today, I'm sharing a game-changing recipe that will help you add one more delicious vegetable to your rotation.

Why Beets Deserve a Place on Your Plate

Beets are often overlooked in our weekly meal planning….they are messy and look like too much work…. but these vibrant root vegetables are nutritional powerhouses. Rich in fiber, which feeds our beneficial gut bacteria, beets also contain compounds called betalains that support liver function and natural detoxification processes – particularly important during perimenopause when our bodies are experiencing hormonal shifts.

A Simple Yet Sophisticated Salad

This elegant beet salad combines earthy, sweet, tangy, and creamy elements to create a dish that's both nourishing and satisfying. The combination of roasted beets with creamy goat cheese and crunchy pistachios creates a texture party in your mouth, while the balsamic vinegar adds a sophisticated depth that will make you forget you're eating something so healthy.

Ingredients

  • Roasted beets, cubed (I love the flavour of roasted beets, but in a pinch, pre-cooked beets are awesome)

  • High-quality balsamic vinegar

  • Extra virgin olive oil

  • Sea salt and freshly ground black pepper

  • Crumbled goat cheese

  • Chopped pistachios

  • Fresh chives, chopped

Simple Beet Salad

Ingredients:

  • 2 (8-ounce) packages store-bought cooked, ready to eat beets— see notes for how to roast your own, if you can’t find any!), knobby bits cut off, quartered

  • 1 tbsp balsamic vinegar

  • 1 tbsp extra-virgin olive oil

  • Kosher salt and freshly ground pepper

  • 2 oz goat cheese, crumbled (as always, measure this with your heart!)

  • 1/4 cup roasted pistachios

  • 3 tbsp minced chives

Directions:

  1. Cut the beets into quarters or if large, into 11/2” cubes, and add them to a bowl. Toss with 1 tbsp balsamic vinegar, 1 tbsp extra-virgin olive oil, a big pinch of kosher salt, and one grind of pepper.

    Crumble 2 oz goat cheese over top. Sprinkle 1/4 cup roasted pistachios and 3 tbsp minced chives on top.

    Enjoy!
